It looks like the propeller will be an awesome platform for a UAV controller! I'm just now gearing up to join in the fun. (I've done some BasicStamp and some PIC coding, so I'm hoping I can be helpful!)
I agree that the A1037-A looks like a nice, light, and cheap GPS. Did you find a good antenna yet? I found this guy on mouser but haven't bought one yet...

I use the Parallax GPS chip (which comes with an antenna!). It's a bit more expensive--$69--but it's a "smart" GPS, which is to say that you can send it queries and it sends back just the information you want, not a long string of NEMA sentences that you have to parse. (You can get the NEMA sentences too, if you want). It's got standard pin widths, so you can breadboard it. It's what we use with the Basic Stamp UAV.
