I am looking to get started and move in to FPV a little later. I have 20 some years in rc and consider myself being able to get the hang of it quickly, but never FPV'd before. What are some parts I should stock up on, other than props?

The 3DR is the way to go. I built a custom frame that is rigid. The development for the APM 2 will come later. I purchased one also and will play around with a acro (plane) frame first until the copter code is developed further.
Are you using the Jdrones or 3DR ArduCopter? The Jdrones one is designed with crush zones, so you'll be replacing nylon screws and polycarbonate parts. The 3DR frame is designed to be a bit more robust (although heavier as a result) and props are the only thing that should break.
