I have a Futaba 8FG transmitter and a 14-channel R6014HS receiver. Channel 1-6 say "Digital servo only - for HS mode." Is it ok to use the high-speed mode on the receiver on the ArduCopter?

You can turn your Rx to normal mode 14ms frame rate - read the manual on how to do it.
I have 12FG with both 14 and 8 CH HS receivers but never attempted to switch to HS mode. Interested if this will make a difference or if its even compatible.
