Is it possible to install larger motors and ESC's on a low-power quad?
I'd like to buy a lower-cost, intelligent quad and increase its lifting power by using larger motors and ESC's.
Would that work?

yes, as long you that "intelligent" quad let you change it's PID's and other relevant settings
That would mean anything that is controlled by anything running ArduCopter , will work (and even has autotune that can help) - on the other hand, you have DJI toys that cannot be used that way.
