My planes exceed the bank and pitch angles

On all my planes with APM1 APM2.5 and APM2, when I do the test in FWA or FWB mode, the max and min pitch or roll angles, the aircraft exceed this angles and I don't know what parameter I have to set.

I had a problem like that and it was from vibration from the motor.
