Yesterday we were flying our quad on a big running field. Flight was very good and stable. But one thing we notice is that the throttle is too powerful. A slight increase in throttle results in a huge increase in altitude. At one point it flew very high and we still don't know why it seems it wasn't responding anymore, or it wasn't responding fast enough so we couldn't lower it on time. And this happened without ever reaching anything near half throttle. We were also afraid of lowering it too fast and then crashing it down on the floor. Then it went out of sight behind a tree so we kept lowering throttle even though it was out of sight so that we could at least find it. Miraculously we found it perfectly landed on the middle of a street next to the field without any damage except some damage to a prop and a broken frame leg.
Can somebody give some flying tips so that we can have a safer flight next time? Could we lower the maximum throttle with our Spektrum DX6i? What would you recommend in case the quad is going out of sight? What to do in cases where the quad is too high? How can we keep better control of altitude?

I'm running the FahPah kit, and while the motors have authority, they're not difficult to manage. Hover is a little below half-stick. Response is quick.
I did notice that in GPS Lock mode, the throttle/collective authority is very weak. I had to take it out of GPS lock to keep it from dipping into the weeds.

did you fully calibrate your TX?
and are you using the stock arducopter kit motors / props or something more powerful

my next quad will get GPS with a telemetry display on my TX, so I can at least see which position and attitude it has
