Will this adapter work for connecting Xbee modem to ArduPilot?I considered also one from Adafruit, but that must be soldered, so if that above will work, I'll buy those.Thanks.

Ok, those are not the 868 and draw less current.
As to distance, I read from the Xbee Pro 868 docs they should be well apart to not interfere:
"Note: These modules are designed to maximize the range of the radio. When testing modules on
the same desk or in close proximity, use power level 0 and keep them at least 3 feet (1 meter)
apart in order to avoid saturating the receiver. When using higher power levels keep the modules
at least 24 feet (7 meters) apart."
You should check if such recommendations apply for the Pro 60mW you've got.

Power Requirements
Supply Voltage 3.0 – 3.6 VDC
Transmit Current 500 mA typical at 3.3V (800 mA max)
Receive Current 65 mA typical
I am afraid your adapter is a little on the low side for the Pro 868, but you did not mention if you wanted this 868 or some other Xbee which would draw less current.
