IRIS noob.
I would like to know how to change the Stabilize Mode settings for more nimble and responsive flight. I'm not planning flips or rolls, just need a little more challenging experience with Stab mode.

Sport mode should give you all the speed you want.
Try tweaking the curves and/or exp, rate on the yaw/pitch/roll channels on your radio before modifying your frame parameters.
Yes, just follow the basic tuning guide, which will work with any GCS.
