Failsafe on XBee

Any suggestions on how to configure a failsafe on telemetry? If I'm flying solely with joystick & planner via XBee I'll need to replicate the failsafe functionality of my radio.

Inconsistent motor outputs while sitting level

I have a very confusing problem with motor outputs that I think is the reason my first few test flights have resulted in the copter flying diagonally across the garden!

Is it possible to move a prebuilt APM2 I bought as an ArduCopter to a plane? If so, how?

Flying solely with Joystick/APM

Is this a clever thing to do? Am I playing risky flying solely with a Joystick and the APM? I'm using a 900MHz XBee and have never had issues so far but I haven't heard anybody else here talk about doing this before so wondered if it's not considered
